Breakfast Egg Roll-up

You set the tempo, the rhythm, and the intensity, because you personally set your goals. You want an effective detox. You want a smaller size. You want to live a healthier more vibrant life. You are now demanding better health for yourself! Today we cook a delicious breakfast to kick-start this month of May…we are preparing the “Breakfast Egg Roll-up”.

Ingredients: (serves 2)

  • Cooked chicken breast, cut into pieces
  • 3/4 cup organic, cremini mushrooms, cut into pieces
  • 4 Tbsp. non-fat cottage cheese
  • 1 small can organic, diced, fire-roasted chilies
  • 8 egg whites OR 6 whole eggs
  • 1/2 tsp. organic Italian seasoning
  • Organic spray olive or avocado oil
  • Large ceramic pan

You will be preparing two roll-ups and will use half of the ingredients per roll-up.

In bowl, thoroughly mix 4 egg whites OR 3 whole eggs, ½ mushrooms, ½ chilies and ½ seasoning.

Bring skillet to low-medium heat which has been sprayed with oil to prevent sticking.

Pour egg mixture into skillet which will be a thin layer in bottom; once heated through and mixture becomes just solidified, slide onto a plate.

Spread cooked egg mixture with cottage cheese, sprinkle with chicken pieces and roll it up; place in preheated 250 degree oven and REPEAT for second roll-up.

Put second roll-up in oven while cleaning skillet and bowl.

Sprinkle with some sliced green onions and add a couple tomato wedges to complete.

Italian Sunrise

Good morning to a new month…hello April! My life must be filled with fun as the saying goes, “Time flies when you’re having fun!”, because the speed at which it’s passing by is staggering. Life truly is great…keeping active, eating for health, enjoying family & friends often, and taking time to rejuvenate. Yep, I’d say life is full, fascinating, felicitous and fun!

Ingredients: (single serving)

  • 2 fresh, organic baby spinach leaves, sliced into small strips
  • 4 organic egg whites
  • 1 Tbsp. non-fat, organic, cottage cheese
  • 1/2 tsp. organic Italian seasonings

Spray a small 8” ceramic omelet pan with olive oil & heat to low.

In bowl, thoroughly combine spinach strips, egg whites, cottage cheese and seasoning – add some red pepper flakes if desired.

Add some sliced tomatoes to your plate and garnish with some fresh, organic parsley.

Easy Easter Egg Bake

Did you remember Easter Sunday is coming up—are you thinking about serving a nice brunch for some loved ones? Here’s something easy for a special couple on a special day or multiply this recipe and serve a larger crowd accompanied with a tossed green salad and some chilled sliced beets. The shrimp gives this dish that special occasion zing and is sure to be a crowd pleaser.

Ingredients: (serves 2)

  • 1 cup cooked, wild-caught shrimp, cut into pieces
  • 3/4 cup organic chopped broccoli
  • 2 organic, green onions, cut into pieces
  • 3 Tbsp. organic, non-fat cottage cheese
  • 1/2 organic tomato, cut into pieces
  • 1 tsp. organic, dried dill weed seasoning
  • 8 organic egg whites

Spray a 5”x7” glass dish with spray oil, set aside.

In bowl, thoroughly mix egg whites; then add shrimp, green onions, broccoli, cottage cheese, tomato & dill weed.

Pour combined contents from bowl into oiled glass dish.

Bake in pre-heated oven at 350 degrees until cooked (approx. 40 minutes).

Mellow Morning

Morning time is a great time to set the pace for your day. Allow time to organize your thoughts, plan your attack on projects, and schedule fluid and nutrition intake opportunities to keep your brain and body at optimum levels of endurance. Are you able to fulfill the day’s scheduled production activities without burning out? A mellow morning meal is an ideal beginning!

Ingredients (serves 2):

  • 1/2-3/4 lb. previously seasoned & roasted organic chicken breast cubed
  • 2 oz. fire roasted, organic diced green chilies in can
  • 1/2 tsp. organic Italian seasoning
  • 8 organic egg whites
  • 4 Tbsp. non-fat organic, cottage cheese
  • Spray olive or coconut oil

Spray small glass dish with spray oil (5”x7”x1½” deep).

Break egg whites into a bowl and thoroughly whisk until well blended.

Gently mix in remaining ingredients and pour into oiled glass dish.

Bake in oven at 350 degrees until cooked (approx. 25 minutes).
