“Boogie” Breakfast

It’s a New Year so let’s keep it nice and easy…time to stay light on our feet with some “Boogie” action in the warmth of the kitchen. We want to enjoy our first meal of the day while keeping it healthy. Our “Boogie Breakfast” will warm your chilly bones and offer a satisfying start for a great day.

Ingredients: (serves 2)

  • Lean, ground beef
  • 1/4 Onion, chopped
  • 1/4 Red bell pepper, chopped
  • 1/2 Jalapeño
  • Handful spinach leaves, chopped
  • 4 Tbsp. non-fat cottage cheese
  • 8 Egg whites
  • Spray olive or coconut oil

In small ceramic skillet, sautéed your ground beef until cooked.

(may cook day or two in advance).

Spray small, glass dish with spray oil (5”x7”x1½” deep), set aside.

In a medium bowl, combine onion, bell pepper, jalapeño, spinach, cottage cheese, egg white and beef; now thoroughly mix together.

Pour combined ingredients into oiled glass dish.

Bake in pre-heated oven at 350 degrees until cooked (approx. 25 minutes).
