Chipotle Coleslaw

Lunch/Dinner: “Chipotle Coleslaw”

A very colorful side or add some cold shredded chicken for a light, tasty meal with lots of crunch!

Ingredients: (serves 4)

2 Tbsp. organic mayonnaise
2 Tbsp. organic, plain yogurt
1 Tbsp. organic cider vinegar
1-2 tsp. minced, chipotle peppers
1 tsp. organic, pure maple syrup
¼ tsp. Himalayan salt
¼ tsp. ground black pepper
4 cups organic, shredded slaw mix
¼ cup organic, chopped fresh cilantro
¼ cup organic, chopped scallions
4 Tbsp. unsalted, roasted pepitas
(Optional) 1 large organic chicken breast, shredded

Whisk mayo, yogurt, vinegar, peppers, syrup, salt & pepper in a large bowl until smooth
Add shredded slaw mix, cilantro, scallions and 2 tbsp. pepitas (and chicken)
Toss well to thoroughly coat all ingredients
Top with remaining pepitas for a delightful dish!

Calypso Chicken

“Calypso Chicken”

We do need to just kickback and take a break from time to time to regenerate our very being. Grab a glass of your favorite beverage while you peacefully enjoy a calm afternoon of perfect grilling. That’s right…while you’re enjoying your quiet time…your well-seasoned bird is nicely browning to pair with a fresh green, organic salad as you create your “Calypso Chicken”. A perfect rhythm for your down time is yours to enjoy!

Ingredients: (serves 4)

• 3 1/2 lbs. whole, organic chicken
• 2-3 Tbsp. organic avocado oil
• 1 tsp. organic, garlic powder
• 1 tsp. organic, onion powder
• 1 tsp. 21 Seasoning (a Trader Joe’s special)
• 1 tsp. organic, smoked paprika
• Himalayan salt to taste
• Organic, ground pepper to taste

Thoroughly wash and dry the chicken

Cut it in half, length wise

Thoroughly rub your bird with oil

Sprinkle bird with all seasonings, being careful not to accidently rub-off while handling

Place on preheated grill with skin-side up…be sure flame not directly under the chicken but to the side to prevent burning of your bird

Close the grill and keep at 375 to 400 degrees for approximately 90 minutes, while hanging out on the patio with your favorite company and beverage

Mojo Chicken

“Mojo Chicken”

Yes, summer is grill time and that gives me the outdoor time I just love. Slight breeze, warm temperature and a great meal to enjoy with family or friends!

Ingredients: (serves:4)

Ingredients:

• 1 cup refrigerated organic orange juice
• 1/3 cup loosely packed, fresh, organic oregano leaves, chopped
• 1/3 cup organic olive oil
• 1/4 cup fresh, organic lemon juice (2 lemons)
• 1/4 cup fresh, organic lime juice (2 limes)
• 10 medium, organic garlic cloves, finely chopped (1/4 cup)
• 1 medium, organic jalapeno chile, unseeded and thinly sliced
• 1 tsp. Himalayan salt
• 4 organic, boneless, skinless chicken breasts
• 2 medium-sized, organic red onions, sliced into 1/2 inch thick rings
• 4 handfuls, organic arugula leaves
• 4 servings, organic asparagus stalks
• 8 organic cherry tomatoes, sliced in half
• 8 organic cremini mushrooms
• 4 Tbsp. shaved parmesan cheese

Mix together orange juice, oregano, oil, lemon juice, lime juice, garlic, jalapeno, & salt; add chicken and toss to thoroughly coat chicken; chill one hour or overnight

Heat gas grill to medium-high; place onion rings on oiled grated and grill until charred, turn and char second side; remove to warm dish and cover with glass cover

Now carefully grill tomatoes, mushrooms, & asparagus; transfer to warm dish & replace cover (watch carefully so as to not overcook)

Using tongs, place chicken from marinade to hot grates; grill uncovered, 6-7 minutes per side, until internal temp reaches approx. 160 degrees.

While chicken is grilling, prepare plates with handful arugula. charred onions & shaved parmesan cheese

Remove chicken & place on onion slices; add tomatoes, mushrooms, & asparagus for a picture-perfect presentation!

Curry Chicken Bites

“Curry Chicken Bites”

These chicken bites are flavored with traditional Indian spices and are low-carb and pair nicely with riced cauliflower which tastes amazing, soaking up the extra sauce!

Ingredients: (serves: 4 + left-overs)

2 lb. organic, ground chicken
3 large, organic eggs
½ Tbsp. organic, ground turmeric
½ Tbsp. organic, ground cinnamon
½ Tbsp. Himalayan salt
½ Tbsp. fresh-squeezed, organic lemon juice
Garnish with chopped parsley or cilantro

SAUCE
1 large, organic white onion, chopped
5 Tbsp. organic butter
1 Tbsp. organic minced garlic
1 Tbsp. organic grated ginger
1 tsp. organic curry powder
2 tsp. Himalayan salt
1 (28 oz.) can organic crushed tomatoes
2 Tbsp. organic garam masala (Indian spice)
1 Tbsp. organic ground cumin
1 ½ cups organic, heavy cream

Preheat oven to 400 degrees; line two baking sheets with parchment paper
In large bowl, combine chicken, eggs, flour, turmeric, cinnamon, salt & lemon juice
Form mixture into round bites (approx. 40); coat hands with olive oil to help with stickiness while rolling
Place on baking sheets, place in oven and bake for 7 minutes then turn chicken bites, bake second 7 minutes then turn again, now bake remaining 6 min., then remove from oven

During baking time begin making sauce for chicken bites
In small saucepan, melt butter…add onion & heat over medium-low heat 3 minutes
Add garlic, ginger, curry powder & salt and cook an extra minute
Add tomatoes, garam masala & cumin…simmer for 12 minutes until thicker
Add heavy cream & bring to a simmer; for added spice…add ½ tsp. curry at a time
Add chicken bites to the sauce & allow to marinate over low heat for 15 minutes

Place chicken bites on plate accompanied by steamed cauliflower rice & garnish!
