Beefy Chill-Buster

“Beefy Chill-Buster”

Ingredients: (serves 3-4)
• 1 1/2 lbs. organic, lean beef stew meat, cut into bite-size pieces
• 4 Tbsp. raw Coconut Aminos or Bragg Liquid Aminos
• 14 oz. can diced, fire-roasted organic tomatoes with green chiles
• 2 large, organic, red bell peppers, cut into strips
• 1 large organic onion, cut into strips
• Seasonings: 1 Tbsp. cumin, 1 Tbsp. unsweetened cocoa powder, 1 tsp. chili powder & red-pepper flakes to taste

In ceramic pot add cut beef, 1 cup water, chosen aminos, cover pot and simmer for 1 ½ hrs. (meat will be nice and tender)

Once meat has simmered; add tomatoes, red bell peppers, onion and all seasonings; thoroughly mix together with beef; continue to simmer for another 15 to 20 minutes – do not overcook onions & peppers

Cocoa Beef

“Cocoa Beef”

Ingredients: (serves 4)
• 2 lbs. organic chuck roast, well-trimmed and cut into small chunks

In iron skillet add 1 Tbsp. avocado oil and heat to medium; add prepared beef and thoroughly brown

Cocoa Beef Sauce
• 1 cup coconut milk
• 3 Tbsp. cocoa powder
• 1/2 tsp. red pepper flakes
• 1/2 tsp. cinnamon
• 1/2 tsp. onion powder
• 1/4 tsp. Xylitol sweetener
• 1/8 tsp. Himalayan salt

Completely mix all sauce ingredients together then pour sauce over cooked beef in skillet and heat to low boil; immediately reduce heat, cover and simmer for 45 minutes.

Serve with a side of organic, steamed, green veggies

Filet Supreme

“Filet Supreme”

Ingredients: (serves 4)
• 2 lbs. organic, grass-finished, beef filet or sirloin roast
• 1/4 cup fresh, organic dill, finely chopped
• 1/4 cup fresh, organic flat-leaf parsley, finely chopped
• 3 Tbsp. spicy, organic brown mustard
• 1 tsp. each: ground paprika & poppy seeds
• 1/2 tsp. ground cinnamon
• 1/2 tsp. fresh, ground pepper

Heat oven to 425 degrees Combine dill, parsley, mustard, paprika, poppy seeds, cinnamon & pepper in small bowl Rub mixture all over the roast and let stand at room temperature for 30 minutes Place roast into glass baking dish and place dish into pre-heated oven for 15 minutes Reduce heat to 300 degrees and continue cooking to desired wellness, using a meat thermometer to determine rare, medium, or well…usually an additional 20 to 50 minutes This protein dish pares great with mashed cauliflower and fresh broccoli!

Spinach-Pepper Frittata

“Spinach-Pepper Frittata”

Ingredients: (serves 4)
• 1 lb. grass-finished ground beef
• 1/2 organic onion, chopped
• 1/4 organic red bell pepper, chopped
• 1 organic Jalapeño pepper
• 1 organic tomato sliced
• Handful organic spinach leaves
• 1/2 cup organic grated cheese of choice
• 10 organic eggs, beaten
• Avocado oil

In medium iron skillet, sautéed your ground beef until browned, remove; clean and oil skillet

In a medium bowl, combine onion, bell pepper, jalapeño, tomato, cheese and eggs
and thoroughly mix together

Pour combined ingredients into oiled iron skillet and add sliced tomatoes

Bake in pre-heated oven at 350 degrees until firm (approx. 30-40 minutes)

Breakfast will definitely be a hit!
